MEL’S CHICKEN SALAD
3 13oz cans chunk chicken breast or 5 cups shredded chicken breast
1 cup finely chopped celery
½ cup finely chopped onion
¼ cup finely chopped hazelnuts or almonds
1 cup mayonnaise
1 cup heavy whipping cream
1 packet splenda
salt and pepper to taste
Combine all ingredients with the exception of the whipping cream. After beating the whipping cream till it forms peaks, fold into the combined ingredients. This recipe makes 11-½ cup servings. Each ½ cup serving is only 2 carbs.
My daughter and I put a ½ cup on a small wheat LaTortilla Factory tortilla, and it was absolutely heavenly! This was a 5 carb lunch when you count the 3 carbs for the tortilla.
You may also consider using a leaf or romaine lettuce to wrap up the chicken salad. I promise you will not be disappointed – this is delicious!!
