  • Marci's Chicken Cordon Bleu

    OH MY!! This is nummy. Just had it. I took another recipe and just tweaked it a tad.

    Ingrediants:

    4 chicken breasts
    4 ham slices
    5 swiss cheese slices
    1/2 cup of cheddar cheese
    1 tbs of chopped parsely
    1/2 cup of cream

    Pound chicken so it is thin. Fry both sides in pan with butter, not all the way done, just so a little brown.

    Place on plate and SAVE drippings. Roll the chicken ham and swiss cheese up and secure with toothpicks. Place in greased casserole dish.

    Take the drippings and add cream on LOW heat. Add in 1 slice of swiss cheese, 1/4 cup of cheddar and parsely. Stir constantly until cheese melted. Pour over chicken, place lid and cook @ 350 for 20 minutes, or until done.

    This is really the best cordon bleu I have had. We live next to the best steakhouse around and I love theirs, but low and behold, this is much better and without the breading even

    Gotta love it!

    Haven't entered it in fitday, but it is a low dish.

    P.S. I served with brocolli and put the left over cream souce on that, very tasty.

    Thanks! I made this tonight (with a couple of slight variations 'cause I was doing it from memory instead of looking for the recipe!), and this was very good. I rolled them up raw and browned the outside in olive oil, then put them in a baking dish, made the sauce in the pan I had browned the chicken in, then poured the sauce over the chicken rolls, covered in foil and baked for about 20 minutes. It was tender, moist, very good -- I used all parm cheese in the sauce which does not melt well, so next time I will try another cheese in the sauce!

      I was looking for something different to do with my chicken and used this receipe, as my sister in law and her husband were coming over...!!! They loved it ...and so did I !!! Thanks!!
