Well, I found this meatloaf recipe somewhere online and it brought me to the Low Carb and Lovin' It site on Food Network. So I took this recipe and made a couple small adjustments.
So the adjustments I made were:
I did not put anything in the middle (pancetta and provolone)
I added bacon to the top with a tomato "sauce"
My sauce was:
4 tbsp Tomato Paste
1/2 tsp splenda
2 tbspn water
The sauce on top was too sweet and too thick, it turned more into a glaze than a sauce. Otherwise, I just made a traditional meatloaf. It was EXTREMELY flavorful and very tasty; however, it was a bit dry. I may have overcooked it. I will definitely be making this again, but I may follow the recipe to the letter. Don't get me wrong, it was really good...
