I was really craving some fried shrimp tonight, so I went with an experament that turned out -fantasticly-. I really really wish I had taken a picture, but I inhaled it too fast. Maybe i'll make it again tomorrow and post a pic!
I used frozen (already cooked) shrimp, but I think it'd work even better with raw shrimps.
thawed them and gave them a coat of eggwash (water+egg)
then I coated them with a mixture of crushed pork rinds, all purpose seasoning, and cajun spices.
then I fried them up in a pan of olive oil for a few minutes on each side, turning when the side is brown and crispy.
Served it over a cup of spinnach, a pinch of feta cheese, and some kibsdressing (mayo,paprika,onion powder,garlic salt) on the side.
Even my dad who isnt on atkins said the shrimp was awesome. I'd almost just roughly crunch up some rinds and fry them, just to serve over a salad like crutons lol, its really good. The last batch I made was a little bit more done than I meant them to be, and because the shrimp were already cooked it made them a little tough, so it might be a good idea to do this recipe with raw rather than cooked shrimp! The mayo I use could even be used as a dip rather than a dressing for a main course, alongside some mushroom fries or somethin.
