1 tsp. oil/ 1 can (6 ounces) albacore tuna, drained and mashed/ 1 cup shredded cheddar cheese/ 3 slices (1 1/2 ounces) American cheese/ 3 eggs/ 3 tbls. ground flax seed meal/ 1 tsp. garlic powder/ 1/2 to 1 tsp. salt/ 1.) Preheat the oven to 400 F., and grease a 9-inch pie plate with the oil.2.) In a large bowl, combine the tuna, cheeses, eggs, flax seed meal, garlic, and salt. Mix well.3.) Pour the tuna mixture into the prepared pie plate, pat down firmly, and bake for approximately 30 minutes, or untill browned and bubbly. YIELD: 3 servings, each with 5 grams of carbohydrates and 3 grams of fiber, for a total of 2 grams of usable carbs and 38 grams of protein.
