  • German Potato Salad

    Ok, here is the German Potato Salad recipe I got from Amy, and it's soooooo good!!!

    GERMAN POTATO SALAD
    • 2/3 c vinaigrette dressing
    • 1/4 c dijon mustard
    • 1 TB Splenda
    • 12-16 oz cauliflower
    • 1 c green pepper, chopped
    • 1 c celery, chopped
    • 1/2 c red onion, chopped
    • Turkey Kielbasa
    Mix dressing, mustard, and Splenda in a large bowl and set aside. Cook cauliflower according to package or steam fresh cauliflower. Drain and add to large bowl. Add bell pepper, celery, and onion. Set aside. Grill or cook turkey sausages. Cut into chunks. Add turkey sausage to cauliflower. Top with dressing and toss until evenly coated. Serve warm.

    Makes 6 servings

    Fiber 3.28
    Protein 7.83

    I didn't use Splenda, and I used red peper instead of green (I don't like green...lol). It was sooooo YUMMY!!!

      I've only made up a few recipes so I'm not that creative...lol. I usually find recipes on low carb boards and cookbooks I do LOVE to cook though!!!

        would love the link. I'm always looking into ways to diversify my menu. By the way your before and after pictures are amazing. I tried to post pictures of me but it wouldn't let me. It said they were too large. Haven't figureed that one out yet.

            Oh Nicole..this looks YUM.. Going to try it this weekend.. I have a Cookout to go too.. Now I do not like MOCK potato salad but this ought to be good with the vinager dressing? What kind did you use?

              Hi Sandy
              I use Newmans Own Olive Oil and Vinegar. It's REALLY good. I'm sure you'll really like it. I may make that dressing (The Newmans Own mixed with Dijion Mustard) and try it on a salad. It was tasty!!! Let me know how you like it!!!

                Will do.. I am getting discouraged.. Trying to substitute potatoes for other things..like I fixed a roast with Turnips and Radishes.. I do NOT like them..its not like eating potatoes..

                  Have you tried the Mock Double Stuffed Baked Potatoes??? OMG Sandy they are REALLY good...REALLY!!! I have a hard time stopping myself from eating them and they are made with cauliflower...YUM!!!

                        yes the recipe (like stuffed baked potatoes) is one of our favorites here. I'm actually making it tonight. My husband is constantly asking me to make it and he never even liked cauliflower before.

                        Theres rarely leftovers of this.

                          Hi Nicole.. Well I made the German Potato Salad today..not bad either.. Got my nieces birthday party tonight and the only thing she will have legal there is Hamburgers and Hotdogs... So I am taking this to eat too..

                          I am starting to turn into you.. I have been slaving away in the kitchen..lol I fixed the German Potato Salad, Peanut Butter and Jelly Cookies and My Broccoli Salad this weekend...

                              Well I don't know that its fun.. I mean I was OFF from my job at a Dining Hall and I did the same thing at home..lol
