  • Great fish recipe! (induction friendly too!)

Tried this out last night (we have an overabundance of fish in our freezer right now...don't you just feel so bad for me :P

This is induction friendly if you leave out the almonds

Grouper (or other mild fish--maybe hogfish or snapper)
    Juice of 1 lemon
    seasonings
    1 cup mayo
    1 cup shredded fresh paremesan
    1 cup crab meat
    1/2 cup slivered almonds, toasted
    PREHEAT OVEN TO 350

Now, we had a really big slab of grouper so I upped my amounts, and I used bottled lime juice (I prefer lime over lemon) and just sprinkled it over the fish, about a cap full. For seasonings I used dill, parsley, a teeny bit of salt and garlic pepper blend.

Place fish on foil lined (or sprayed) pan and drizzle lemon juice over and season. Place in oven and cook until fish is done, flakes easily (20-25 min for average size fish).

Mix mayo, cheese and crab meat (I upped my amounts as my fish was BIG and I added some of the garlic/pepper blend to this also).

When fish is done baking remove and spread the crab/cheese mixture evenly over top. Place under broiler until just starts to brown (this took like 15 minutes for me, but then I have a very old gas stove so it took FOREVER for it to get up to broil heat). Remove and add slivered almonds (I toasted my own in a skillet with butter while the fish was cooking) and enjoy.

This was absolutely DELICIOUS!!!!!!!!!!! And VERY ATkins friendly!!!
