  • "Clone recipe" for Alice Springs Chicken

    For those who like Alice Springs Chicken, here is a close clone to give the flavor of the chicken.

    4 chicken breasts
    2 ounces of shredded cheddar cheese
    2 ounces of shredded swiss cheese
    1 cup of mushrooms
    4 slices of bacon

    Preheat Oven to 350 degrees.

    Place the boneless, skinless chicken breasts in a baking dish.

    Place 1/4 cup of mushooms over eat piece of chicken and place a piece of bacon over the mushrooms to hold them in place.

    Bake for 35-45 minutes until chicken is cooked through. Remove from oven. Combine cheeses and place equal amounts on each piece of chicken and return to oven for 7-9 minutes, until melted.

    Rather than try to recreate the honey mustard sauce, I combine some mayonaise, mustard with some horseradish sauce for a dipping sauce or just forget the dipping sauce all together.

    This is a great recipe. If you get this at Outback, tell them to hold the honey mustard sauce. I like it with boneless chicken thighs too. I tend to overcook and dry out the breasts too much, so boneless thighs work great for me.
