  • "Spice Kissed" Pork SpareRibs!

    My boyfriend and I used to have "sparerib" night every thursday before we went on atkins (one of the many great dishes that have brought me here!). In a desperate attempt to recreate this tradition I searched the internet for low carb sparerib recipes. Here's what I came up with! (I'll take pictures the next time I make it! we have it twice a week so it'll within the next 1-2 days)

    We get a 10-12$ package of boneless pork spareribs from the wholesale store we go to (BJ's). I usually cut the ribs in half and freeze them when we buy them this way I can make it twice. It's really too simple! Everything goes in a crockpot. You'll need several hours to get the fall apart texture on the meat. 6 hours should be perfect.

    Take the ribs and sprinkle with cayenne pepper! this will make them very spicey so if you don't like that, then use it sparingly. I literally cover them with it though. (Last time I used a bit too much and it was way toooo HOT--spicey foods supposedly release endorphinsthough, so if you're having a rough day this is a really good recipe!)

    After the cayenne pepper I get out the pumpkin pie spice!

    I see that I've lost you at this point. Let me explain. The inspiration for pumpkin pie spice was because of the internet search I did originally. What I found was a mention of using "Chinese 5 spice". I looked up that and found that many of the spices used in chinese 5 spice are similar to pumpkin pie spice, and I already had that in my house. Hence the wacky substitution!

    So sprinkle the ribs with pumpkin pie spice! Try not to go overboard because spice carbs do count (so does the cayenne pepper)! You don't want to coat the ribs just 3-4 sprinkles on each side. Add pepper and salt.

    Cut up one onion and throw it in the crockpot. Add about a cup of water. Throw in your "spice kissed" ribs and turn the crockpot on high. A few hours later you'll smell that you've made the right decision! The meat will be firm still though so let it cook for at least 5-6 hours.

    Spareribs usually come attached to the other ribs still when it's boneless. Don't worry about cutting them into seperate strips the meat will fall apart once it's been cooked for 5-6 hours.

    Carbs vary depending on how much spice you use and whether or not you eat the onion! We have this meal twice a week now and consider it a must have each week.

    Goes great with spaghetti squash and alfredo sauce. I have to be honest though we usually scoop some out into a bowl and dig in. Let me know if you make these and what you think of them! I'd love to hear feedback.
