Swiss roll:
3 large eggs (or 4 medium) + 20 grs cream + salt (a bit)
Whip the whites and mix the yolks with the cream. Mix both carefully not to down.
Oven (190 centigrades) for 10 minutes. Must be a little brown but not crispy or you can´t roll it up.
Filling:
2 cups raw spinaches (you can mince them)
50 grs. shrimps (in microwave 1 minute cooked).
180 grs. tuna (2 little cans, in olive oil)
4 large spoons home-made Mayo (which I make with: 1 egg, olive oil, ½ little spoon salt, 1 large spoon vinegar and a pair of large spoons water if it´s too thick,)
Mix all together.
I thought it´d be better explaining the steps in photos!
You may serve it covered with golf sauce: Mixing mayo + tomato sauce (as Ketchup may not be used because of its sugar) and then cut it into slices.
Of course there are infinites fillings. My favourite are: avocado and shrimps, ham and blue cheese, or roasted chicken and mozzarella … and the roll tastes really soft!
