I was looking for quiche recipes on here and only found a few so I thought I'd share a website I found, it isn't "atkins friendly" persay but it does have a lot of quiche recipes that I think could be easily converted to our woe. So of course for the recipes that call for a crust, you'd want to ignore that if you're in induction, like I am or if not, make your own atkins friendly type. I don't know what the etiquette is for adding website links to our posts so I hope this is ok, there isn't any registering or anything for sale on this site and I have no affiliation with it other then just wanting to share what I found. :wave

This is the Alton Brown quiche custard recipe, you can use it with any fillings, so do, and have fun:

It does NOT get easier than this ...
Brown 1lb of fresh sausage (ground) in a skillet. Meanwhile, whisk together 8 eggs with 1 cup of heavy cream. Grease a baking dish (any size/shape will work). Add browned sausage to dish. Cover with fresh spinach leaves, mushrooms, asparagus, onions, peppers, really any veggie you would like. My husband loves it when I add tomatoes! Cover veggies with 2 cups of grated cheese (I prefer sharp cheddar or swiss, but I like flavor. Any type would work.). Finally pour eggs and cream over the whole dish and bake at 350 degrees for 30 minutes. Sometimes I bake it as long as 45 minutes, you want the center to be set.
Let it cool and then I transfer it into single serve dishes (like gladware) and put them in the fridge. My husband and I will grab one in the morning, warm up 30 seconds in the microwave and enjoy a home cooked, quick breakfast.
My coworkers all groan when we meet for breakfast meetings at work and I bring this along with me. They are all inhaling the 'free donuts' that my boss brings in, and yet everyone is wishing they could have my egg casserole!
Of course, you could make this with bacon crumbles or any flavor of sausage. I change it each week so it does not get too monotonous.33 yo // Female // 5'4"
