  • Quick and easy scrummy mushrooms

    As this dish is high in fat and flavour, I find it quashes the cravings. It takes about 5-10 mins to make. It is fine on induction if within your cheese limit for the day.

    Ingredients:
    7-8 mushrooms
    2 tablespoons approx full fat soft cheese with garlic and herbs (Boursin in the UK)
    half an onion
    4 slices of bacon cut in to little strips
    half a courgette (zucchini) OPTIONAL
    small red chilli sliced OPTIONAL
    handful of grated hard cheese (such as cheddar) OPTIONAL

    Directions
    Fry the bacon strips in oil (or butter) in a small non-stick saucepan. Add the onion and mushrooms (and chilli and courgette if using). When mushrooms have slightly browned add the garlic cheese and turn down heat. This will melt and coat the other ingredients. Add a dash of heavy cream if you'd like a bit more sauce. Add the cheddar and stir and viola! You're done!

    I eat this on it's own but you could serve with spinach or other veg.

    okay sorry to ask this because I know I've heard it before but what are rashers? does that mean slice?
