  • Psylly Banana Flax Cakes

    2 eggs (2 carbs)
    2 Tbsp Heavy cream (1 carb)
    2 Tbsp Water
    1/2 tsp. baking powder
    1/2 tsp. Banana Extract
    2 Tbsp. Psyllium husks (1 carb)
    2 Tbsp. Flax seed Meal (1 carb)

    Follow directions carefully and they'll come out perfect.

    Wisk together the above ingredients. Allow the mixture to sit for 10 minutes. The mixture will be very thick. Oil and preheat your griddle to just a little above medium. Spoon the mixture by heaping Tbsp. and it should make 3 or 4 pancakes. Cook for 4.5 minutes on one side then flip and cook for an additional 4.5 minutes. They should be nicely browned and fluffy.

    Top them off with a pat of butter and 2 Tbsp. of Atkins Syrup (1 carb)

    ***I round up on my carb counts, so they may be a bit less. I don't fitday.com user friendly, but those of you who do feel free to figure out the true carb count and let us know.
