  • Crustless, Low Carb Quiche

    I made this tonight and it turned out pretty good! I made it using a number of different recipes and tried to make it Atkins and Induction friendly.

    Crustless, Low Carb Quiche
    4 eggs
    1 cup heavy cream
    1/4 cup minced green onion
    1/2 cup frozen spinach
    5 strips of cooked bacon
    8 oz grated swiss cheese
    3 leafs of fresh basil finely chopped (optional)
    1/8 tsp cayenne (optional)
    1 clove garlic minced
    4 medium mushrooms sliced
    1 tbsp butter

    You can also add ham, feta, parmesan, flax seed or artichoke hearts to enhance the flavor.

    Mix eggs, cream and cayenne in one bowl. In another bowl mix onion, spinach, bacon, swiss cheese, basil, garlic, and mushrooms. Melt butter and coat the pie pan with butter. Add all the contents of the second bowl to the pan and then add the contents of the first bowl.

    Bake at 350 for 40 minutes and let stand 20 minutes before serving. 8 servings.

    According to FitDay, Nutrition Total for Quiche: 158 grams fat, 23 grams carb, 109 grams protein, 1943 calories

    Nutrition Per Piece (1/8 of quiche): 19.8 grams fat, 2.9 grams carb, 13.6 grams protein, 243 calories

    This maxs out your daily allowance for cream so be aware!

    you can also line the bottom of the pie pan with grated swiss cheese for a crispy crust.

      I don't have my book w/ me, but there is a recipe for crustless quiche in the back of DANDR--I have made it several times and it is delicious!
