  • Shrimp Creole

    Shrimp Creole is good if you like seafood.

    I pretty much just throw the stuff in a skillet/pot to be Atkins friendly.

    Green Peppers
    (Onions later on, you can omit early on in your journey they are not allowed on induction if I remember right?)
    Shrimp
    Old Bay Seasoning
    Sugar Free Tomato Sauce
    Cauliflower (this takes the place of rice)

    Boil Green Peppers and Onions in water, (enough to cover) remove from pot after lightly cooked retain water. Grate Cauliflower to resemble a rice shape and size. Add to water. Cook about 3 to 5 mins. (I'm high altitude so you may have to adjust) then add sugar free tomato sauce, green peppers, onions (if able to), seasoning, then right before serving add cooked shrimp.

    It should have a "gumbo" like consistency. Not real watery but hearty. I haven't really looked at carbs on it sorry (I'm a little new to all this, but hubbys endocrinologist (dh is a diabetic) recommended it for low carb) but it's something that has been good for us.
