Just a bit further down on that same page are the garlic breadsticks, also made with cauliflower, and they are FANTASTIC! I will broil them for a few minutes at the end to get them crispy, but besides that, awesome! I dipped them in ranch dressing, and felt like I was on a binge (but they are veggies, and have protein from the egg, how cool!!!)

How positively primo! Just polished off 4 slices , and my only caveat is that you need someone to share with as you will eat too much otherwise. I think I went over on my cheese allowance and for once will be right at the 20 gram cutoff for carbs. If I could stick to just one slice I'd make it 3X a week! Cleo is an Atkin's goddess.

This was really good. I made it last night for dinner. I doubled the recipe and spread it out on a cookie sheet over parchment paper. After about 15 minutes I flipped the "crust" over on the pan, removing the parchment paper, and baked for another few minutes, watching it carefully so it wouldn't get too dark. Then I topped with tomato sauce, dried oregano, pepperoni and more mozz cheese. Broiled it till the cheese was melted and browning. It was tasty. We had it with my version of a Caesar Salad.

I am doing the Happy dance!
I love Pizza and it has always been my down fall....Not anymore.
I made this last night and my family loved it! This is going to be our Friday night meal. ( We used to have Pizza every Friday night)

                              Tips:
Make sure you squeeze any excess water out of the cauliflower. If it is too moist it will fall apart. ( my first crust)
I also added a second egg to my second attempt and it came out excellent. I let it cool a few minutes before cutting and the crust stayed together so my family was able to pick it up like a regular slice, They loved it.
