  • Cajun PotRoast - Ideal for Crockpot

    Cajun PotRoast

    4lb roast (i do this in the crock pot so you can go cheap -- when it soaks in
    the juices for 10 hours it will be tender)
    3 Onions, cut into 8ths
    1 Large Green Pepper, chopped
    6 Stalks Celery, chopped
    3 Cloves Garlic, minced
    2C Beef Broth
    28oz Canned Whole Tomatoes
    1 1/2 C Tomato Sauce
    Hot Sauce
    Crushed Red Pepper Flakes
    Olive Oil

    Heat oil in a skillet and brown garlic with the paper flakes. Then sear the roast on all sides.
    Place roast, garlic and pepper flakes in the crockpot and everything else on top. Cook on low while you are at work.

    I know the tomato sauce and tomatoes aren't the greatest due to sugars but I just pick the tomato pieces out and use a slotted spoon to avoid the liquids.

    Wow Kat this sounds like a wonderful meal thank you for it..i cook in my crock pot a lot being a full time college student..my family will love this..congrats on your loss.
