  • Spin-off recipe - Oopsie w/ slaw and pastrami

This is a total spin-off of Nicole's flax bun sandwich. I've been drooling over it ever since I've seen the picture. Problem was I didn't have the ingredients so, I made it with the following:

    Cleochatra's Oopsie:
The Lighter Side of Low-Carb: Better-Than-Ever-Best-Yet Revoloopsie Rolls!

    Linda's Coleslaw:
Linda's Low Carb Menus & Recipes

Boar's Head provolone (1 slice) and Boar's Head 1st cut Pastrami

Verdict...wonderful! I think I would enjoy the Oopsie better as a piece of low-carb french toast. I ended up taking it off and eating the rest of the sandwich without it. It didn't have an eggy taste, but the texture was different. However, I could see myself using these hundreds of ways.

    Drooling here!! Look great!

Thanks for posting the picture and the recipe links..I was just looking for the recipe for the rolls. I can't find the one I printed out last month! I must have been blind or just too tired to find it the last time.

Ps..fine time for me to try to give up dairy! I love cream cheese!

Lisa - I know that some posters have given up dairy and have made these. The cream cheese isn't an ingredient that would ruin this recipe. It's in there to make it have a richer taste. You could definitely make it without it. It would take some getting used to for a sandwich, but for lowcarb french toast...I've been dreaming about it. You could also make a trifle with these once you get to OWL. You could layer this with strawberries (or other berries on Rung 3) and fresh whipped cream.

Thanks for that thought! I made them today because of everyone talking about them so much...I just had to try to my hand at it.

Lisa - what did you think of them?

To me the texture was very different. My dh who isn't eating LC thought that they were good. He actually ate his sandwich with an oopsie.
