    I've been trying a lot of new recipes lately. Here goes the reviews!

    Hamburger Broccoli Alfredo Casserole

    Ok this is just downright delicious. Definitely one for my lowcarb binder. It's satisfying and has a great taste.

    Again...this was delicious. I've eaten this for three meals over the course of a few days. It's that good. However, mine was very runny even after letting it sit for 10 minutes after baking. This afternoon I got a piece out of the fridge and it held together like an actual piece of lasagna without the noodles. Upon serving it may fall apart, but the next day leftovers will hold together. Another one for my lowcarb binder.

    And now I bring to you my absolute favorite lowcarb recipe. I am not lying when I say that I would eat this without being on Atkins (hubby ate it too). It's Cleochatra's Cauliflower Pizza...WOO HOO!
    The Lighter Side of Low-Carb: I Can't Believe it's Cauliflower Pizza Crust!

    After making this, I love her with my whole heart. The only part of the pizza that you can taste the cauliflower is the part of the crust that isn't covered with sauce and veggies. It's easy to cover the entire pizza and not have this "issue." I made this circle of deliciousness with sausage, onion, red and green peppers over tomato sauce. My husband ate three pieces and I couldn't stop talking about how I can't believe it's cauliflower pizza. This is a MUST try. I made two pizzas and riced the cauliflower very easily in batches in my 3 cup food processor.

    In one word...Ick. I will not make these again. I didn't enjoy anything about them. I've given up on my quest for something breadlike because I always end up disappointed.

    WOWZA! I felt like I just went to Long John Silver's or Kentucky Fried Chicken to get this. You know that sugary delight that they serve you at those fast food joints? This is a legal lowcarb copycat and it's absolutely delish.

    Broccoli Quiche

    I adapted this recipe by adding bacon. The bacon turned something ordinary into a show stopper. It was very good and enjoyed by my entire family.

        The Italian Casserole is one of my favorties. I let the casserole sit for ten minutes after baking before I cut it, and mine didn't get runny. There is one thing that I do just a bit different than Linda's recipe. I sauteed the mushrooms in butter before adding them to the casserole. Raw mushrooms have a good bit of water in them, so maybe that is what caused the casserole to be runny.

        I'm gonna try the Hamburger Broccoli Alfredo casserole and the pizza!

            Italian Casserole is one of our favorites, too! Here's another:
            Linda's Low Carb Menus & Recipes. This reminds me so much of the foot-long chili dogs we used to get at Sonic. Yummy!

            That Hamburger-Broccoli Alfredo Casserole looks good, too. Thanks for pointing it out.

                    You Won't Believe it's Cauliflower Pizza Crust



                    1 cup cooked, riced cauliflower*
                    1 egg
                    1 cup mozzarella cheese
                    1/2 tsp fennel
                    1 tsp oregano
                    2 tsp parsley


                    **pizza or alfredo sauce

                    toppings (make sure meats are cooked)
                    mozzarella cheese




                    Delicious and easy.

                    Preheat oven to 450 degrees Farenheit.

                    Spray a cookie sheet with non-stick spray.

                    In a medium bowl, combine cauliflower, egg and mozzarella. Press evenly on the pan. Sprinkle evenly with fennel, oregano and parsley.

                    Bake at 450 degrees for 12-15 minutes (15-20 minutes if you double the recipe).

                    Remove the pan from the oven. To the crust, add sauce, then toppings and cheese.

                    Place under a broiler (grill for the Europeans) at high heat just until cheese is melted **.



                    You can hold it in your hand.

                    Notes:

                    *I use frozen cauliflower prepared according to package directions. After cooked and slightly cooled, I shred cauliflower with a cheese grater, and then measure for the recipe. (Don't pack down the cup with cauliflower. Just fill it with a spoon or the cup itself.)

                    ** The pizza sauce I use is Great Value Pizza sauce from Wal-Mart. At only 3 net carbs per quarter cup, you get a lot of punch for little carbohydrate pow.

                    *** You can try re-baking the pizza at 450 once you add toppings if desired, but the crust is not quite as crusty. There is a minimal difference, so see what works best for you.






                    Make the Super Veggie Supreme a Hit in Your House, too!

                    My Super Veggie Supreme:
                    Sun-Dried Tomato Alfredo
                    a little mozzarella
                    chopped, fresh tomato
                    sliced, fresh mushrooms
                    purple onion, chopped
                    jarred artichoke hearts, chopped
                    frozen spinach, thawed
                    green olives, sliced
                    chopped red bell pepper
                    a little more mozzarella
                    pine nuts


                    Reheats nicely and can still be held in the hand, even the next day.


                    Pizza crusts can be frozen after the initial baking and used later.

                    Makes 4, 1-slice servings. Can be doubled for a larger pizza (double nutritional information).



                    Nutritional Information for the entire crust:
                    calories: 434, fat: 25 g, carbohydrates: 8 (net), 13 if counting all, fiber: 5 g, protein: 41 g.

                        I also tried the link with no results but if you don't press the link and go to the bottom of page and click Pizza, Pizza, Pizza..it works..Want to try the Zucchini Crust pizza too!

                          Okay, it's been awhile since this post has been brought up, but I had to give my two cents on a recipe I tried from Linda's site.

                          The White Castle Hamburger Pie. This is probably one of our faves, but I did modify it a bit. When I made the topping, I added about 1 tablespoon of dill relish to it and man o' man, did that make a huge difference!

                              I use a round pizza pan..mine is about 14 inch's I believe..I try to spread the crust as thin as I can, sets up better and is crispier.
