Grilled Boneless Leg of Lamb
1 boneless leg of lamb, butterflied
salt
pepper
olive oil
rosemary
slivered garlic
I butterfly and stab the leg of lamb all over with a sharp paring knife. I insert slivered garlic into the holes. Sprinkle chopped fresh rosemary on top, salt and pepper, and drizzle with olive oil and give it a quick massage. Throw this in the fridge to marinate about 2 hours. Remove from fridge about 30 minutes before grilling to come to room temperature. Grill over med-high flame until browned on both sides, then put on the "cool" side of grill until desired temperature is reached. I like mine medium, and use an instant read theomometor to check the temp. Put it on a platter, let it rest about 5 minutes, then slice on the bias and enjoy. Sorry, I didn't include measuresments. I just eyeball the ingredients. Use your judgement.
