    In the wee hours of the morning, (you know the time when your brain is rehashing and creating), I came up with an idea of a special breakfast. It is something reminenscent of the McDonald's breakfast burrito. Before Atkins, I would stop by Micky D's and pickup a large coffee, 4 creams, 6 splenda and TWO breakfast burritos. I really felt special on those days.

    This morning I put my idea to the test and it think my induction-friendly recipe for a knock-off Breakfast Bowl-ritto is very delicious.

    Here is the recipe:

    Breakfast Bowl-ritto

    1 Egg
    1/4 c Shredded Cheese (I like the Taco/Mexican kind)
    1 Pre-cooked sausage ( I like the Turkey sausage patties by Jimmy Dean)
    1 TBsp LC Salsa

    In a microwave safe bowl crack in the egg and stir till mixed. Place turkey sausage on microwave safe saucer or you can use a paper towel. Whatever works for you. Place both bowl and saucer into the microwave. Set to 3 minutes. My microwave just cooks the egg within 1-1/2 minutes. Remove the egg and set aside. Allow sausage to warm and then remove from microwave. Next, crumble the sausage up and place on top of the egg (keep egg in the bowl). Add shredded cheese onto egg and sausage. Place back into microwave for 10 seconds. Remove and then top with the salsa.

    I like to wrap the entire bowl with aluminum foil and take it to work for a compact and filling breakfast. Add a cup of decaf coffee with the LC works and it's breakfast heaven. Remember to count the carbs in the meal towards your 20 g total. Enjoy.

    Yum, I make something similar, but I gotta try this.

    1st goal: 139 (earlier weight)
    what the rungs mean to me:
    rung 1 - more veggies
    rung 2 - dairy (some milk in coffee)
    rung 3 - seeds, nuts (mostly sprinkled on salads)
    rung 4 - berries, melon
    rung 5 - wine -
    rung 6 - beans, hummus
    rung 7 - other fruits
    rung 8 - carrots/ potatoes (nah, prolly not)
    rung 9 - whole grains (fresh Dutch breads...)
    Major Goal - 128 lbs/ healthy range
    (on to pre-maintenance)

      MMMM that looks good!
      Only a word of caution, if one is to use packaged shredded cheese. Read the lable on the package to make sure it doesn't have potatoe starch. Companies use it so the cheese doesn't clump together.
