I am posting this here because soup is a main meal for me anyday, especially with cooler weather coming. I'm a yankee. I modified a soup recipe that I had found and I think it's good.
small package mushrooms
(I used fresh and I think it was about 2 Cups)
1 14.5oz can chicken broth (wal-mart sells Great Value which has no carbs!)
1 half pint heavy whipping cream
chives to taste
1 stick butter
I cut the mushrooms up into very small pieces and cooked them in the butter and broth awhile. Then I added the chives (chopped) and the heavy whipping cream. It is a very simple and tasty soup, that is very easy on the carbs. Some may find the soup to simple but hey, that's what spices are for, and this hit the spot for me. I think I might try it with portabella mushrooms next time since they are so flavorfull, and of course you could throw in chicken. Enjoy.

Carbs: 1.5 per serving
