  • Spinach/Feta Omelet

    I love love love this.

    Ingredients:
    Butter
    Onions
    Peppers
    Garlic
    Hot pepper flakes
    Fresh Baby Spinach
    4 eggs (scrambled)
    Crumbled Feta Cheese

    Sautee butter, garlic, onions & peppers in medium size pan over low heat for about 2 minutes. Cover. Add great handful of baby spinach. Cover. Let simmer for about 3-5 minutes until spinach cooks down. Add scrambled eggs and sprinkle hot pepper flakes. Cover. After about 5-7 minutes make sure eggs are done then add feta cheese to half of the omelet. Flip other half on top, slide onto plate. Enjoy!
