    Green Chicken Enchilada

    I just made the Green Chicken Enchilada Casserole from Linda's site.


    Linda's Low Carb Menus & Recipes


    It was too die for! Everything about it was fantastic. It was easy to make, and it tastes so good! I had my bf try it also and even he liked it!

    I definitely recommend this recipe to everyone.
    Starting Weight: 185 October 28th
    1st Goal: 180 (met on October 30th)
    cw:169
    2nd Goal: 165
    3rd Goal: 155
    4th Goal: 147
    Final Goal: 140 by June 20th

    I made this tonight and it was fantastic, even my super picky boyfriend loved it. I used salsa verde on accident instead of the regular green salsa so my sauce came out a bit more runny than i think it was supposed to, and I also added chipotle peppers (HOT, ouch!) and it was amazing. I was so happy to find something knew and relatively easy to make, that the bf would actually eat! I will so be making this again. Its a bit heavy on the cheese allowance though, so i guess it was a good thing the cream cheese sauce was runny and I didnt get as much of it!

        This is one of my favorites. I make it every other week. I like to center a portion on the plate and surround it with shredded lettuce and sliced avacado, scallions, jalipinio and olives. So yummy!
        Great recommendation. I give it a ten also!

              It's in the oven now. I added cilantro and a healthy dose of minced fresh garlic. I'm pretty sure I could add garlic and cilantro to anything and be happy

                Wow, this was wonderful and very filling. Nikki even liked it and she hates everything... especially stuff that's A. healthy and B. tastes good

                I suspect this'll become a regular dish in my house.
