  • French Toast - AWESOME!!!!!!!!!!!!!!!!!!!

    French Toast
    2 Eggs
    1/4 cup heavy (whipping) cream
    2 pkgs. Equal or Splenda
    Cinnamon to taste
    1/2 of a 3 oz. bag Pork rinds.

    (1) Mix eggs, cream, sweetener and cinnamon.
    (2) Crush pork rinds and mix with above mixture.
    (3) Allow to soak until it becomes a very thick and goopy batter (3-5 minutes).
    (4) Fry pancake style in butter until browned and flip over. Cook until done as you would french toast or pancakes.

    Serve with any LC syrup or make your own as follows:
    (1) Cream butter until soft (use as much as you need for syrup). I melt it in the microwave.
    (2) Add maple extract and sweetener to taste.

    oh I like your syrup idea.
    If you are still in induction you can eat this but don't forget to count those sweeteners in your 3 a day limit.
    This does have carbs in the eggs, cream and packets so be sure to count them in your daily limit.

      i tried this recipe..and it ROCKS!

      i am continuously amazed at the creativity of the board members...
      who woulda though pork rinds could be so diverse! i was amazed at how the texture of this is exactly like if you made it with bread....fan-freaking-tastic!

      next up is to try the danish...can hardly wait till morning...

        Pork Rinds

        I'm getting a new respect for pork rinds...made a taco salad last night using Brook's taco seasoning's recipe and pork rinds as the chips..added cheese..lettuce...a few slices of tomato...sour cream..guacamole....was so good I even forgot to put the jalepeno slices in there. ;P

              I just made these with moderate success. I have two tips to improve the quality:

              1. Crush pork rinds FINELY! They puff up a bit after you put them in the batter, so don't overdo them, and make sure they are fine crumbs.

              2. Use regular low-carb syrup. I made my syrup using butter and maple extract, but I found the butter to be overwhelming after also cooking the pancakes/french toast in butter.

              I suppose you could also use vegetable oil to cook these like you would a regular pancake. They were definitely tasty, but I couldn't really eat mine because I didn't have regular low-carb syrup and my homemade syrup was just too much butter for me.

              Otherwise, it *is* amazing how create people are on this WOE.

                IF you have the big (chip size) bag of pork rinds how much would you say you use?

                Would two packets equal 2 teas o f splenda?

                Will this be enough for my husband and I for breakfast?

                  Ugh I just had this and if you don't like pork rinds, you won't like this....any other way to make it?

                    This is how I make Stuffed French Toast:


                    2 eggs mixed up really well with a dash of Splenda -- and I mean a small dash
                    1 tsp vanilla extract
                    1/4 tsp cinnamon
                    2 oz cream cheese
                    syrup (I use Atkins, but I will try to make my own now that I found a recipe)

                    Mix the eggs, vanilla, cinnamon and splenda. Pour into a hot frying pan coated with 1 tsp of butter. When that side gets hot and bubbly, flip and fry the other side. (Like and omlet)

                    Remove from pan, spread with cream cheese and fold over. Now syrup, I don't use but maybe 2 tsp as the egg is sweet enough. Yummy!

                    Even my kids and boyfriend like this recipe!!

                    Try it and see what you think.

                    I hate trying to figure out carb counts on Fitday. I should have done this at home for you. Atkins syrup is not on there, cinnamon is not on there, and the cream cheese in oz is not on there!

                    I really don't think it is too much. This recipe is nice for Saturday or Sunday morning breakfast.

                      I want to try that so bad this morning but all I have right now is BBQ pork rinds @#$%*&^%%$#@ I just need to invest in the pork rind bussiness because I do everything with them. That and lettuce lol. Just tried fried chicken the other night using crushed up pork rinds as the coating.... my family ate the heck out of it.

                        I really didn't enjoy the pork rind french toast at all (even though I am a big fan of pork rinds and don't have that issue to overcome). But I love the creativity!

                        The stuffed french toast recipe posted by stephanie looks quite good, I'm going to try that soon!
