I don't know if someone has already posted this somewhere or not but thoguht I'd share anyway. I needed to make a quick tortilla and made this. I've used it for a soft taco shell, a breakfast burrito shell, and a sandwich shell and it works great. You can add spices to fit whatever taste you want for your meal.
2 TBSP Flaxmeal
1 egg
Spices (a little salt, garlic powder, etc should do the trick)
Spray a medium size skillet with cooking spray. Mix ingredients in a mug and then pour into the skillet. Pick up the skillet and rotate it in a circular motion (much like you would if you were trying to spread around a pancake) until you get the size tortilla you want. I've been able to spread mine to about 9 inches in diameter. Place back down on the stove and THEN turn the heat on to medium-low. Let it cook for about 45 secs to a minute. Use a wide spatula and flip and cook the other side until set.
