  • Cabbage Roll Pie - Linda's recipes are great!

    I've made several recipes from Linda site but so far this one is my absolute favorite. It's in the oven right now and I can hardly wait for it to be done. It's wonderful reheated so you can take it for lunch and it freezes well too. (IF there's anything left after a couple days!)

    CABBAGE ROLL PIE
    1 pound ground beef
    1 stalk celery, minced
    2 tablespoon onion, chopped
    3-4 cups cabbage, chopped, about 8 ounces
    2 tablespoon butter
    8 small mushrooms, chopped, 3 ounces
    Salt, to taste
    1/2 teaspoon pepper
    Garlic powder, to taste
    1 cup chicken broth
    3/4 cup heavy cream
    8 ounce cheddar or Monterey jack cheese, shredded
    2 eggs, beaten

    Brown the hamburger, celery and onion in a very large nonstick skillet; drain the fat. Add the cabbage and butter; cook until the cabbage starts to wilt. Add the mushrooms and cook until the cabbage and mushrooms are very soft and start to brown slightly.

    Season with pepper, salt and garlic powder to taste. Add the broth and cream; bring to boil and cook on high, stirring occasionally, until reduced and thickened. Watch closely so it doesn't boil over or evaporate completely.

    Stir in the cheese, then the beaten eggs. Pour into a greased 10-inch pie plate. Bake at 350ยบ for 25-30 minutes until set.

    Makes 6-8 servings
    Can be frozen

    OMG. This is too weird. I spent like 2 hours on Linda's website yesterday prepraring for my rEEEREEEEREESTart LOL today. I love her recipes. I already made a few last year and loved them. I copied all the ones I want to try especially this first month and it is great because it gives me something to look forward to that way I wont get bored or not be prepared. I too am making this one this week.

      You'll love it, Nichole. I always said it was too much trouble for me to cook since it's just me cooking for one now, but I'm actually having fun with it. I work a second job so on the days I work late I've been making sure I have things that I can take two meals for the day with me in case I don't get home until late. Now I don't have to worry about what to eat.

        I made this one tonight. WOW is it EVER good! 1/6 of the pie made a perfect main dish for me. Actually, that's all I had for supper... was full!

        I'll definitely make this one again.
