    2 zucchinni
    2 yellow squash
    1 red bell pepper
    1 green bell pepper
    (you could do less veggies if u dont want to make as much)

    1 package chicken. you can use boneless, with bones, all breast, full chicken what ever u want . I only like white meat so I use breasts boneless and skinless.


    cut the veggies up into average size pieces you can cut them as large or as small as you like.

    put the veggies in a deep pan pour in some olive oil. season with , italian seasoning, garlic, season salt, and pepper. use your hands and kind of mix everything up make sure the veggies are nice and coated.

    push the veggies to the side of th pan and put the chicken in the middle of the pan. drizzle with a little bit of olive oil and redo the same spices again. spread the spices all over the chicken.

    cover with foil. cook for 1 hour at 350-375 depending on your oven after 1 hour remove foil and cook an additional 45minutes to an hr..

    this is a alot of food definate leftovers. its also good once it cooks to spoon out the olive oil that is in the bottom of the pan and use as a sort of gravy for you chicken. with all the spices its really tasty

    THis sounds good and I have everything to make it.

    I could assemble it in the morning, cover it and put it back in the fridge.

    Then have my sons pop it in the oven after they get home from school..and voila......dinner will be ready when I get home from work.
