I grew up eating breaded fried chicken cutlets and just adapted a recipe for them, basically substituting bread crumbs with flax meal. Made them tonight and mmmmmm. Also induction friendly.
Combine equal parts flax meal and parmesan cheese. Add garlic powder and parsley to taste. Mix. Beat an egg and dip the chicken cutlets in the egg. Then lay it in the mix of flax/parmesan/garlic/parsley. Fry over medium heat in vegetable oil. Be prepared to wipe the stove down when you're done.
