    Pizza Quiche

    I made the zucchini squash recipe from Linda's site the other day (actually last night lol - and it's almost gone) - and I was thinking... hmmm... what can I put in a quiche?

    So, I started sauteeing mushrooms... added some onions... and then green peppers... added parsley, garlic powder, italian seasoning, salt and pepper... it started smelling like an awesome pizza! I was like, oh yeah! Let's switch this up! Then added pizza seasoning...

    I blended 2 Tbs. pizza sauce together with 2 eggs, and less than 1/4 c. cream....

    Went back to my peppers, onion, and mushroom mix and added mozzarella... added pepperoni... put it in a round baking dish poured the egg/pizza sauce/cream mix over it and stirred carefully so the egg stuff would cover everything...

    It's cooking right now and smells great! (I'll repost with a pic and a judgement to see hwo it turns out!)

    And, it was awesome

    I put a lot of mushrooms in it though... I'd use less next time, and skip the parsley.

    But, still, awesome.

      What a great idea! I just made hamburger quiche tonight, and it was soooo yummy! Next time, I'm going to try pizza!

            You know I dont know what I would do without quiche. This pizza version is something I am going to have to try. Thanks.

                Well I made the pizza quiche for supper and it was delicious! I made some variations though. I didn't have sweet cream so I used sour cream instead and I used pepperoni cheese because I don't like mozzarella. Even my husband loved it so it will be on the menu from now on.

                  I made the pizza quiche recipe but added half a tin of tuna. It was delish! I've been eating a lot of steam veggies with meat and salads so far but for the last week I've been cooking dishes I've found on this forum and it makes such a difference.

                          I just started the Atkins...and I'm super excited! I typically am not much of a cook, but then again that's probably why I am here in the first place (too much fast food!) So I planned out my meals for the entire week, went the the grocery store last night...and this Pizza Quiche was the first thing I made. It was absolutely fabulous...Definitely helped reassure me that "I can do this!" Thanks!
