I made some great stuffed peppers last night.
I used red bell peppers because I like the sweeter taste, but any will work (I tried with Jalepenos too, but they got too bitter) for this.
Brown up about a pound of hamburger with some onion and set aside.
Grate a califlower (sp?) head and saute/fry it in a very small amount of the hamburger grease. Season with a fair amount of chili powder, a bit of cumin, and add half a can of suger free tomatoe sauce, half a can of rotel tomatoes (diced tomatoes and chilies), heat then combine with ground beef.
Chop the top of a pepper off, layer a little grated Pepper Jack Cheese in the bottom, then filling, then a bit more cheese, then more filling, and top it with a a little more cheese.
Bake at 375 for 20 minutes to a half hour. For me, I go until the pepper is tender, but not mushy.
The filling should be a little more drythan what one typically sees in a stuffed pepper, which helps everything stick together and not be "drowned" and mushy.
I will post pictures next time I make them. These were really good and filling. Hope someone trys them and likes them. Reheated well today for lunch too!
