I've been cooking again. Looking for ways to up my fiber intake. I decided to try using milled flax seed as a thickening agent. I have been disappointed in how "thin" the atkins chilis are and came up with this:
1 15 oz can of tomato sauce (28 carbs, 21 net)
1 package of McCormick hot chili mix - (16 carbs, 12 net)
3 14.5 oz cans of beef broth (0 carbs)
1 -2 pounds of meat, your choice. I used 1/2 pound ground beef left over from my taco omlette from breakfast, and 1 pound of smoked pork I had handy.
1 cup of milled flax seed (64 carbs, all fiber baby!)
Brown the ground beef and toss everything in the pot. Put it on low and let simmer for as long as you wish. I threw in some Dave's Insanity Sauce because I like stuff really hot. This will make 12 6 oz servings. Damage report: Just 2.75 net carbs and a whopping 12.25 grams of fiber. Make it hot enough and your water intake will be easier. Make it too hot and you'll be afraid what the fiber does for you.
Poop jokes never get old for me. I guess I watch too much Spongebob.
You will end up with a pretty tasty chili. You can't quite eat it with a fork, but it's a great source of fiber and omega 3 fat. I will be keeping this on hand. You could also substitute a Michelob Ultra for one of the cans of broth. Puts you up to 3 grams of carbs, but I like beer in chili. And out of it too.
