  • Confetti Frittata (Induction Friendly)

    Ingredients:
    9 eggs
    1 bellpepper (chopped in finely)
    1 tbsp butter
    4-5 green onions (sliced very thin)
    about 2 small sized yellow squash (chopped finely)
    1/2 cup of diced (thin slices of deli ham)
    1/2 cup of diced (thin slices of deli turkey)
    1/2 cup of skim milk
    3-4 small/med handfulls of shredded cheese (your preference)

    Preheat oven 350 degreees:

    First sautee your yellow squash, green onions & bellpepper and until all are soft in a frying pan, a tsb butter may be desired to sautee with. Pour them into a cake dish (9x13) roughly in size. Add the scrambled 9 eggs and 1/2 cup of milk, blend all veggies and eggs well together in the baking dish, lastly add in a few handfuls of cheese and stir in gently so the consistency of the veggies, eggs, chopped deli meat and cheese seems pretty even.

    Bake for about 30 minutes

    Allow to sit for about 10 minutes to cool

    Great for breakfast, lunch or dinner-the whole family will love it.

    I was given this recipe by a neighbor, a couple times I added other things to it like mushrooms and olives, but it never turns out as well as when I follow these instructions to a "T", the confetti part of the name comes from the sliced deli meat that is chopped in the casserole...it looks like confetti!

    That sounds yummy, leesh. Thanks for sharing!

    However, the recipe is not allowed on Induction, because it contains milk. Could one use heavy cream instead?

      Yeah...cream is a good substitution for induction; and to be honest it will still turn out fine without the milk or cream. I have had to do it once without before and it actually didn't seem to affect anything. I am not sure, but I assume the milks purpose just makes it more fluffy?
