Saturday was a beautiful day so DH and I invited a few friends over for a picknick at a nearby park. So, I made "fried" chicken which is always a picknick favorite.
Here's the recipe:
Chicken parts
1/2 bag No Sugar Added Pork Rinds
1 cup finely grated Parmesan Cheese
4 Eggs
2 TBSp Creme (optional)
Tools needed:
Foil lined cookie sheet
Non-stick spray
Bowls
Plate
Ziplock bags (optional)
Food processor (optional)
Measuring spoons
-Preheat oven 350 degrees F
-Line cookie sheet with aluminum foil and spray with non-stick oil.
-Thaw chicken (if frozen), rinse well, pat dry. Set aside in a bowl or large ziplock bag.
-In a bowl, stir the 4 eggs and creme together until mixed well.
-Place pork rinds in a food processor and chop until fine. Or, if you don't have a processor, place rinds in paper/ziplock bag and pound. It's easier to put the fine rinds on a plate after processing/pounding.
-Pour egg mixture over chicken parts and mix well.
-Take each piece of chicken and coat with fine rinds, shake off extra rinds. Set aside on foil lined cookie sheet. Repeat until all pieces of chicken are coated.
-Sprinkle parmesan cheese atop of coated chicken pieces to fill areas not completely coated by rinds.
Place chicken in oven and cook for 45 minutes (depends on oven and elevation). When chicken is brown on the outside and white on the inside, (check ), place on in picknick container. Your family and friends will not know that it's low carb fried chicken!
