  • Faux "Scrapple" aka Breakfast Meatloaf

    This is a really simple breakfast that you can make and store easily. Anyone from the Mid-Atlantic has probably had scrapple at least once. It's an old Pennsylvania Dutch breakfast meat that is AMAZING. It's basically all the portions of the pig that weren't used for ham/bacon/sausage/etc (scraps...hence the name scrapple)... thrown together to make a loaf (hence my referring to it as a breakfast meatloaf). This is the way I personally make it, but I'm sure all you creative folks can come up with your own little twists to add to it!

    What you will need:
    2 lbs of ground pork
    2 cups of diced sugar free bacon (already cooked)
    2 cups of diced ham
    2-3 whisked eggs (yolk and white)
    1 shallot, finely chopped
    fresh ground black pepper (season to taste)
    1 sprig thyme, finely chopped
    1 loaf pan


    Okay, so basically this is a breakfast meatloaf. First you want to make sure to grease your loaf pan and preheat your oven to 350*. You will want to fold the 2 cups of cooked, diced bacon and ham into the ground pork, as well as the whisked eggs. The eggs are used to bind everything together so it doesn't all fall apart. Toss in the shallot, pepper, thyme and whatever other spices you may desire. You may also desire to add about a half cup of shredded cheese for something different. Feel free to add other veggies if you would like. Peppers and spinach would be nice in here as well!
    Once you have everything all mashed in together, take your big ball of meat and firmly press it in your greased loaf pan. Bake in the oven for about 50 minutes or until firm. Once this is done you can easily store this in the fridge. Cut yourself off a slice, fry it up in some butter or oil, and then either spread some butter or sugar free syrup on top. Also good with a fried egg on top as a sort of "open face breakfast sandwich".

      Oh my! This sounds like my kind of breakfast! If I can just keep my husband out of it long enough to actually have it in the morning...;o)

          Ryan, that does sound great. Since I am not a pork eater, I will convert it to turkey. I have been eating turkey breakfast sausage patties and this will mix it up a bit for me, I tend to eat the same things over and over out of habit. Thank you for the recipe.

            This is an older post but one that is pretty tasty. I loved scrapple when I lived in Maryland but can't get it up here. This recipe uses eggs as a binder instead of the traditional cornmeal/buckwheat so it's even Induction friendly.

            I made a half batch and used a smaller loaf pan. I also substituted a little sage for the thyme and added some finely chopped chicken livers to the mix. Delicious sliced and fried up with an egg on top (I did a poached egg so I could get lots of that yolk running all over it). A fried egg would be tasty and easier too.

            If you fry up an extra slice, it makes a good & portable snack also.
