I finally got the flax seed bun recipe adjusted so it doesn't taste heavy and eggy. Today I topped it with chicken breast strips dusted with oregano and salt and fried in coconut oil. Then I added mozzarella and a little more oregano and stuck it under the broiler until the cheese was melted.


The recipe I used for the bun was:
1/4 c. flax meal
1/2 t. baking powder
1 egg (beaten until it was foamy)
1 T butter (melted)
pinch salt and oregano
Mix well. Pour into small microwave-safe bowl. (Spray the bottom with Pam.) Microwave approximately 1 minute until center is done.
Cut in half, spread each half with 1 t. mayonnaise, top with chicken and mozarella, then broil until cheese melts.
