  • Deli in a bowl - easy lunch

    I saw this recipe in a cookbook and thought I'd modify it to make it 'friendly'. It sounds weird but it's actually pretty good!

    1 serving

    .3 cup cut up cooked ham
    .3 cup sauerkraut
    .25 cup shredded mozzarella (swiss would be good, too)
    1 Tbsp low carb Thousand Island (I used a recipe I found on this site - see below)

    Lightly mix together and micro til cheese is melty.

    Not quite sure what the carb county would be - I'm guessing 2 or 3 net carbs?

    Oh - the Thousand Island Dressing:
    1/2 - 3/4 cup Dukes Mayonnaise
    1 Tbsp Heinz sugar free ketchup
    1/2 Tbsp Mt. Olive No Sugar Sweet Relish
    Makes 3 servings
