  • chicken gorgonzola....

    I fashioned this after a dish I had in a restaurant. It was quite good and a nice change of pace from boneless skinless.

    Chicken breasts or thighs (I used thighs but I like fatty meat)
    olive oil (to lightly cover bottom of pan)
    basil
    thyme
    tomato slices
    gorgonzola cheese
    provolone cheese

    On stovetop, put olive oil in a fry pan and heat. Place chicken in hot oil and sprinkle with thyme and basil. Cook til they are done, flipping as needed.

    Place chicken in an ovenproof dish. Top with a slice of tomato. Top that with a sprinkle of gorgonzola and a slice of provolone. Place in oven (I used 400 but my broiler doesn't work) until the cheese melts.

    Sounds really good. I love anything with gorgonzola.
