Super Duper Easy Turkey Burgers
Makes 5-7 servings
1lb ground turkey
3-4 tablespoons olive tapenade (costco) optional
1/2 c feta cheese
garlic powder to taste
onion powder to taste
Mix it all up, make patties. Drizzle a little EVOO in a nonstick skillet & fry them...sprinkle a little salt to taste.
We eat these as is with a side of cooked spinach with fresh chopped garlic, red pepper flakes and a good dash of vinegar or....
Steam-Baked mixed Veggies
This is really quick, easy and delicious. A recipe from my grandmother. The juices of the vegetables mixed with the bit of cheese is just wonderful.
Makes 5-7 servings.
1 yellow elephant squash quartered lengthwise then sliced
1 zucchini quartered lengthwise then sliced
1 tray of button mushrooms halved
1 green pepper cut to bite size pieces
6-8 cherry tomatoes halved
onion chunks - how ever much you want
1 T minced shallot (optional)
4T evoo - extra virgin olive oil
salt and pepper
sprinkle of onion and garlic powder
sprinkle of Italian seasoning
A few handfuls of shredded cheese (however much you want)
Put everything in a 9x13 pan, mix it all together except for the cheese. Sprinkle the cheese and cover with foil. Bake @ preheated 350 degree oven for about 30 minutes. You want them to be done, but not mushy.
