Ingredients: (for 1 serving)
-2 Low Carb Tortillas (I use the small size Mission brand whole wheat, 4 net carbs per tortilla)
-4-5 tablespoons of plain tomatoe sauce (not pizza sauce, it generally contains added sugar)
-shredded mozzarella cheese
-1/2 tsp butter for pan, or cooking spray
-Desired toppings
-herbs (rosemary, oregano)
First butter your baking pan to keep the tortilla from sticking to it with just a little cooking spray or butter rubbed on it.
Lay your two tortillas on the pan and put about 2 tablespoons of tomato sauce on each tortilla.
Then layer on the mozarella as thick as desired, next add your toppings like pepperoni, mushrooms, bell peppers, tomatoes, olives, sausage, ham etc.
Tip: bacuse the pizza crust (tortilla) is a little thin, it helps to dice your toppings very small so it is easier to eat after cooking.
Then top it with some herbs like rosemary and oregano for a zesty flavor.
Bake at 400-425 for around 10 minutes.
This is a great quick fix meal.
