  • Low Carb Meat Loaf

    Here's a recipe that I came up with to try to get my veggies in and give us some variety:

    4 stalks of celery diced
    1 bell pepper diced
    1 small onion diced
    1 yellow squash shredded
    1 zucchini squash shredded
    1 pound of lean ground beef
    1 can of mild Rotel
    1/2 packet McCormick meat loaf seasoning

    Mix all ingredients well, place in loaf pan, cover with foil, bake at 350 degrees for 1 hour. Top with shredded cheese if desired.

    Makes 6 servings at 5 carbs per serving (this carb count does not include any cheese that you may add)

    My son, who is a VERY picky eater even liked this!!

        Rotel is a brand of canned diced tomatoes. Really works well in any Mexican dish too.
