    Not sure if something like this is out there already...

    This was actually given to me as a recipe when I was doing a Curves study - they had me doing the Curves workout and eating certain number of calories, etc. This was in the recipe booklet they gave me. Made it several times; always a favorite! And it just so happens to be Atkins friendly

    Prep time: 50 minutes

    8 oz salmon fillet
    Lemon pepper to taste
    2 teaspoons olive oil
    1 Tablespoon lite soy sauce
    2 teaspoons granular Splenda

    Place salmon fillet in a heavily greased baking dish, skin side down. Season with lemon pepper, to taste. Cover tightly and bake at 350 degrees for 40 minutes. Shake together remaining ingredients to make a basting sauce. Uncover salmon and brush sauce on. Broil until nicely browned, basting several times.

    Makes 2 servings.

    Per serving: Calories 245, Carbs 2g, Fiber 0g

    It is so strange because I just finished the best fish I ever made in my life and it started with a glaze base very similar to yours. I am putting it in recipes under Ginger Glazed Mahi Mahi but it would work great for salmon or even chicken fillets.
