    These are from Linda's site...maybe slightly modified. My family loved both of them and they are pretty picky eaters:

    Sausage Casserole
    This is a GREAT one for those that have people in the family that don't like cauliflower. My husband couldn't even tell there was any in there!

    8 eggs
    1 cup heavy cream
    1 pound pork sausage, browned
    1/2 14.5-ounce can Italian crushed tomatoes
    1/4 medium fresh cauliflower, shredded, 5 ounces
    1 teaspoon salt
    1 teaspoon pepper
    4 ounces parmesan cheese
    1 1/2 cups mozzarella cheese, shredded, 6 ounces
    In a very large bowl, whisk the eggs and cream well. Place the remaining ingredients, except the mozzarella cheese in a greased 9x13" baking dish. Pour the egg mixture over everything and mix well. Top with the mozzarella cheese. Bake at 350ยบ about 40 minutes.

    Makes 10-12 servings
    Freezing not recommended

    Tuna Casserole

    Tuna, Canned in Water, 2 can
    Cauliflower, cooked, 0.5 cup riced
    Cut Green Beans, 1 can
    Celery, raw, 3 strip (4" long) finely chopped
    Shredded Sharp Cheddar Cheese, .75 cup
    Heavy Whipping Cream .3 cup
    Mayonnaise, 4 Tbsp
    Onions, raw, .2 cup, finely chopped

    In skillet with a little water, cook the onions and celery and cauliflower til onions start to turn transparent the cauliflower has softened. Most of the water should get absorbed - pour off any excess. Add the cream and mayonnaise. If it seems to thick, you can add a touch of water. Stire in the tune, green beans and half the cheese. Pour into a casserole and chop with the rest of the cheese. Cook in the oven at 350/375 til bubbly and the cheese is melty. My family served this over some whole wheat pasta and I just ate as is.
