  • Fried Chicken Patties (using canned chicken)

    Okay, I don't know about you but I had this can of chicken in my pantry that is sort of like tuna, but its chicken....I was sick of tuna salad and sick of Chicken salad and the thought of another bowl of it just sent me over the edge and I started experimenting!! giggle~ I am pretty sure this is atkins induction friendly and has very low carbs!! You can add 1-2 tsp of flax meal if you feel the need.

    Sooo here is what I did with my 12.5 oz. can of Tyson Chunk Chicken!!!

    Fried Chicken Patties

    12.5 oz. can Tyson Chunk chicken
    2 Tbsp. Mayonnaise
    1 large egg
    2 tbsp. shredded cheese (mexican blend is what i used)
    1/4 cup diced yellow bell pepper (u can use green onion)
    pepper to taste
    1 tsp. parsley flakes, dried
    1/2 tsp. Mrs Dash Lemon Pepper
    dash cumin powder
    dash cayenne (optional)
    oil or butter to fry them

    Open can and drain well. Flake chicken in a medium bowl. Add all the ingredients, except oil, and mix well. Heal oil or butter (I did both) in a medium frying pan. Shape the chicken into loose patties and fry until golden on one side and flip to fry other side. Can top with a smidgeon butter after they are done frying if you like.

    Let me know what you think of this recipe if you try it. I found it quite yummy and addicting!

    You don't need to add an egg to the recipe. Using only mayo is perfectly okay. I have a recipe for chicken, turkey, crab, tuna cakes in my blogspot blog.

      I liked the idea of the egg in it and Prefer the flavor...would almost rather give up the mayo and keep the egg...personal choice i guess lol

        you don't need the mayo if you are using egg. Likewise, you don't need the egg if you are using mayo. Both the egg and the mayo act as binding agents and they really don't have much of an additive effect. For example, using both won't make the chicken cake hold together better than if you used only one. I think it's because mayo is made from eggs.

        Anyhow, my blog has recipes for either the chicken cake with mayo or a chicken cake with an egg. It's the January 2009 entry called "Savory Cakes" or something like that.

          didn't need them ....rather it was more of I wanted them than anything. I am a fair cook and I do realize that I don't NEED both...I WANTED both. I like how they turned out....so that is all...Doesn't matter, I don't make anything the same way twice...I always play with the food.
