  • Homemade Chunky Veggie Marinara Sauce & Chili

    Today Iam making Homemade Chunky Veggie Marinara Sauce & then when it's 3/4 of the way heated through I'll split in half for Chili Base.

    I start with the following in my large 6 quart Crock Pot on high setting :

    2 large can's Diced Tomatoe's

    2 large can's or jar's Sugar Free Tomatoe Sauce

    Fresh Diced Green Pepper "to taste"

    Fresh Diced Onion "by eye/to taste"

    Fresh Diced Celery "by eye/to taste"

    Fresh Grated Carrot "by eye/to taste"

    Mrs Dash Garlic & Herb Seasoning Blend "to taste"

    Big Splash of Dryed Parsley for color

    Splendia/Stevia "to taste"

    Let this mixture cook stiring offen until this is well heated through & all of the veggies are almost 3/4 of the way tender.

    While Iam waiting I go ahead & make 1 pound of Meat Ball's from Ground Beef or Turkey with 1 Egg, Mrs Dash again, Crushed Pork Rinds or Dry Parm Cheese then Fried or Baked.

    Next I get ready 1 pound Browned in a lil EVOO & seasoned again with Mrs Dash Ground Beef or Turkey for the Chili & set a side as well.

    When ready I then split the Veggie mixture into half into another smaller Crock Pot or a Sauce Pan to make my Chili also.

    To finish the Marinara Sauce I add
    Fresh Diced or Canned Mushrooms " by eye/to taste" & the Meat Ball's.

    Continue to cook until the veggies are finished heating the rest of the way through.

    Then serve with whatever other Food Item's you wish !!

    To Finish the Chili I add the Browned Meat, 1 15.5oz can of Kidney Bean's "if wanted & on Level 2/OWL" & Chili Spice "to taste".

    Continue to cook until the veggies are finished heating the rest of the way through.

    Then serve with whatever other Food Item's you wish !!

    I missed this when it was first posted...tonight I was poking around for some sauce and chili recipes and found it. I LOVE this idea of making a big pot of sauce "base" and then finishing it to be two different things. Thanks for the recipe(s).

    p.s. I noticed you use carrot in your base sauce...I used to use carrot too instead of sugar in my sauces. No carrots for me yet so I'm hoping the tomatoes aren't too acidy without it.
