    I experimented over the weekend and came up with this delicious venision dish. It actually is not gamey tasting and I think I can live with it. I know my 3 hunters said..Its a keeper. The carb counts are from fitday. I guess it made about 7 or 8 servings at under 3 grams per serving.

    3Lbs vension cut in serving size pieces = 0 grams
    1/2 Cup sliced onion = 7 grams
    1 green pepper sliced = 10 grams
    1/4 c heavy cream = 2 grams
    2 TBSP olive oil = 0 grams

    Buttermilk

    Soak thawed venision in buttermilk for at least 6 hours, sprinkle with crushed black pepper and salt.

    Remove for buttermilk and rinse off, pat dry with paper towel.

    Put olive oil in skillet and brown both side of meat. When flipping meat over to brown other side, add onions and pepper.

    Once meat is brown add 2 cups of white wine....the stuff you want to drink and the heavy cream.

    Cover and place in oven for about 3 hours at 400.

    The gravy part can be served with mashed cauliflower.

    The next time I will add mushrooms and onion powder instead of onions.

    Was my best recipe ever with venision.
