  • Quiche/Cassarole - YUMMY! and Induction Friendly!!!

    I know there are already several different versions posted, but thought one more wouldn't hurt. I took the basic ideas already here and made it how I thought it should be. It was so good and filling I am having leftovers for breakfast! The weird thing is I really don't usually like this sort of cassarole, so maybe my tastes are changing!
    ~~~~~~~~~
    1 lb ground pork
    1 lb ground beef (would suggest leaner beef so it doesn't get too greasy)
    1 cup diced onion
    5 eggs
    1 cup shredded cheddar
    2 cup shredded mozzarella
    1 cup heavy whipping cream
    garlic powder
    sausage seasonings (no sugar)
    real bacon bits
    Brown the ground pork, using the sausage seasonings to taste. Next brown the beef and onions. Once the beef is cooked mix the pork in with it, garlic powder to taste. Spray Pam in a 9x13 pan and put the meat mixture in the bottom of the pan.
    In a bowl, beat the 5 eggs and mix in the heavy cream. Mix the shredded cheese into this mixture – keeping out a little of the mozzarella cheese. Pour this whole mixture over the meat. It’s thick so you have to spread it around with a spatula. (You can add more eggs if you’d like a thinner “batter”)
    Spread whatever remaining mozzarella cheese and whatever amount of real bacon bits/pieces you like.
    Bake at 350 degrees for about 40 minutes. The whole pan has 13.3 net carbs from what I could decipher. I cut mine into 10 pieces; they are small but filling!
