My hubby bought some Asiago Spinach Dip at Costco and some Artichoke Dip there. I did not care for how either of them taste. I normally eat another brand of spinach dip with my celery. So, since they were HUGE tubs I did not want to throw them out, so what I did was this. I took two large boneless chicken breasts and sliced them lengthwise to make a pocket. I put a large amount of each dip in each breast and added crumbled feta cheese and some generous pats of butter. I sprinkled parmesan cheese over the top and stood the breasts on end with the dip part up in the air in a small casserole dish. They were resting on each other and on the sides of the dish. I baked for 20-30 minutes until the cheese was browned, then I covered with tin foil and baked another 20-30 minutes until the chicken was done and OMG was this GOOD!! It was tender, savory, moist and just dang good! Thought I would share. Not sure about portions or about carb count, but the only carbs are in the dips and they are pretty low carb.

So I used probably about 4 Tbsps a breast using one dip per breast. My hubby and I split half of each breast and devoured it. So maybe the whole thing had around 7-10 carbs and made 2 servings, so one serving I had was around 3.5-5 grams of carbs.. Not bad and DELICIOUS!!!!!!!
2 Chicken breasts, boneless, skinless and cut lengthwise to make pockets.
1/2 cup or so crumbled feta cheese
2 Tbsp butter pats for top
Sprinkled parmesan cheese for top-about 2 Tbsp
4 Tbsp of each dip below
Fill each breast with dip and stand on end with stuffed end up in small casserole dish. Add feta cheese on top, then put butter pats down and sprinkle parmesan cheese on top. Bake 350 degrees for 20-30 minutes until brown then cover with tinfoil and bake another 20-30 minutes. YUMMY!!!
We both loved it so much I will be making it again for dinner this week!
