  • Jalepeno grilled chicken...

    Chicken breasts
    Jalepenos--whole, but slit down one side with seeds removed
    Monterey Jack cheese
    Bacon

    Pound out boneless chicken breast until fairly flat. Place flat slices of MJ cheese on chicked--I use the deli presliced. Put jalepeno in the middle. Fold up the sides and then roll. Secure with toothpicks. I have a spice rub that sprinkle on the outside. Then I wrap bacon around the outside and grill. Yummmy!

    I tried this out . . . what a GREAT recipe. :icondance

    I did a spice rub marinade on it - Cayenne pepper, New mexico chili powder, lime and olive oil.

    What a way to drive the neighbors tastebuds crazy! I am ALWAYS grilling - so much so that my neighbors tease me if I even know how to use a stove!

      I do the same thing with chili's. Each year here in NM I get a huge bag of Hatch or local chili's and have them roasted. Then I spend the morning peeling and freezing them for the year. Nothing is better than roasted chili's in EVERYTHING! :joy

        New Mexico ??? Let me first say I am very jealous of your location. I grew up in Arizona, spent alot of time in Albuquerque . . . and now find myself living in the frozen tundra of New York . . . missing all of the wonderful food - especially chiles - of the southwest ( not to mention all of the georgious red rocks!).

        I have attempted to find an online websource where I can have New Mexico chiles shipped to me - no luck so far. Do you know of anyone who ships these chiles?

        Also, I do grow chiles in my garden up here - though not the caliber of New Mexico soil. I have ancho, aneheim, jalapeno, serrano, cayenne and bannana peppers growing this year. My question to you - how does the freezing process work? Do the chiles lose their zest and fire? Is there a specific way you need to prepare them ? I usually try to eat all of them from my garden before fall . . . because I didn't realize I could freeze them! The thought of "fresh" chiles in the winter - Yummy :icondance

          I grew up in the Phoenix area myself and have lived here for 2 years. It is funny how when I first got here I was a wimp eating chili's. Now I really enjoy them on everything. They love their chili's here. Every fast food joint has chili's available for your burgers!

          I don't specifically know of a place that will ship but when chili season is here I'd be happy to pick up a box and FedEx them to you. I get an airline discount using them so it wouldn't be to expensive. I ship fresh chili's to my brother-in law outside of Chicago each year that way. You would have to roast them yourself though as you can't ship mush!

          The place where I get my chili's roasts them on the spot and you come back in a few hours to get this big mushy plastic bag of them! You let them sit in the bag the rest of the day so the peels steam loose. Then you take each one and discard the peel and deseed if desired. I do a few things with them. I place whole deseeded chili's in single layers in ziplock freezer bags and then I grind up chili's in the food processor and place them in individual freezer bags to use in chili, soups, or stews. The flavor only intensifies as the chili's freeze.

          I have not roasted chili's myself but I'm told you can place them in a 500 degree oven, place on skewers and roast over your stove top or grill on the BBQ. Just cook till charred on the outside and place in plastic grocery bags to steam the skin loose.
