  • Yummy Induction Dinner!! Chicken Curry

    Hi everyone!

    I know its hard to think of new things to eat for dinner, so I thought I would share a great dinner that my family had tonight. I got the recipe off of the Atkins web site. (www.atkins.com) I know there are a lot of recipes on there, so it is kind of nice when someone can weed out one and tell you if its good! This is a great recipe for anyone that enjoys curry, but it is also a perfect recipe if you need to follow a low sodium diet. Here it is:

    Chicken Curry

    .3 tbl butter
    .2 pounds chicken breast fillets, cut into strips
    .1tsp. Curry (the recipe actually calls for cumin, but considering the name is Chicken Curry, I thought maybe it was a typo! Either way, I used the Curry Powder.)
    .1/2 tsp. dried coriander
    .1/2 tsp. dried ginger
    .1/4 tsp. red pepper flakes (optional)
    .4 garlic cloves, finely chopped
    .1/2 c. chicken stock (I used the low sodium version)
    .1/3 c. heavy cream
    .1 tbl. chopped fresh cilantro or parsley

    Directions:

    heat butter in a heavy pan over medium-high heat until foam from butter subsides. Add chicken strips and cook until browned. Add cumin, coriander, ginger, red pepper flakes (if using) and garlic. Cook, stirring occasionally, 2 min. Add chicken stock and bring to a boil. Reduce heat to med. low; simmer, stirring occasionally, 5 min. Slowly add heavy cream and simmer (do not let mixture come to a boil) until heated through, 3 min. Transfer chicen and sauce to a serving plate. Garnish with cilantro or parsley.

      Thanks for the links. I do use both of those sites for recipes and love them! Actually, I would have a hard time without them. Linda's web site is awsome too! Her "twice baked potatoe" recipe was sooooo good. I had some time after dinner, so I thought I would share tonight. The kids and hubby even enjoyed. My husband just started the program with me last week. Thank goodness! Makes things much easier.

        Curry powder is a blend of spices that includes cumin, coriander, ginger and others such as turmeric (makes that yellow color). The Atkins site recipe looks like they were either aiming for a milder/blander curry or trying to incorporate ingredients that most people already have.

        Good call in using curry powder.

          Oh! Very interesting! I was wondering why it was called Chicken Curry, yet called for cumin. I just happen to LOVE curry, so anything that I can add it to...I will! Thanks for the info.

            You might like it with all curry powder instead of using the ginger and coriander. That way you would get more of the turmeric, fenegreek and other spices.

            There are also recipes for homemade curry powders if you like a little more of some of the spices than others. You can customize it to your tastes that way.

              Oh! I forgot to add that this recipe serves 4. However; if you are really hungry....I would say it only serves 2. But that is just me and my unsatiable appetite!

                Remember that if you change the servings, the amount of net carbs per serving will change!

                    Cumin is the base for the curry 'taste'. Using it instead of curry powder gives you the most basic curry flavour but without the 'tang' of the other ingredients.

                    Personally I like making my own curry powder from scratch.

                      The Net Carbs for this meal is 2.0 grams Net Carbs per serving. The above recipe serves four people.

                      Per Serving:

                      Net Carbs: 2.0 grams
                      Fiber: 0.5 grams
                      Protein: 52.0 grams
                      Calories: 403
